Wood pigeons have an excellent flavour and, in any case, are cheap enough to allow you to use only the breast meat in a dish. The carcasses can then be used to make very good stock.
Flageolets are the dried pale-green haricot beans and pancetta is the superior Italian bacon that is now becoming more widely available. Buy it in a piece.
