A soufflé is one of the easiest dishes to make, yet one that never fails to impress. In this version, individual soufflés are left to cool completely, with only a brief reheating under the grill before they come to the table. Successful soufflés stem from the confidence which comes from practice and the knowledge that the secret of success is a medium – rather than hot – oven.
