Noodles are fantastically versatile and can be served as an unobtrusive backdrop to a sauce or act as the main feature of a dish. Here the noodles are fresh and, after brief cooking, are finished with aromatic coriander roots and leaves, shredded ginger and finely chopped hot red chilli. Ketchup manis is an Indonesian sweet soy sauce which you can buy from Asian grocers; it and nam pla – salty Thai fish sauce – complete the intriguingly complex mix of flavours.
