The sesame dressing is Japanese in its inspiration and complements the just-cooked beans perfectly.
Top and tail the beans. Bring a large pan of salted water to the boil and blanch the beans for 3 minutes. Drain, then plunge into ice-cold water for 1 minute to stop the cooking process. Drain again and reserve. Don’t leave them in the water. If you do they will lose flavour.
