Chicory is often called Belgian endive or just plain endive by the Americans and Australians. There are many diners from these countries visiting Quag’s, hence the use of the name in the Quag’s menu. It is a white winter vegetable with tight-packed leaves that is grown in the dark in forcing beds warmed by hot pipes. The exclusion of light is essential in its production, or the leaves go green and curly. Not as curly as frisée, which is also called curly endive or chicory just to confuse us
