‘One way to get the best out of your tomatoes is to roast them, which reduces water content and intensifies flavour. They have so many uses it is worth doing them in large batches as they can be packed in jars, covered with olive oil and kept for up to a month. This oil, and the oil and juice residue from the tins in which they are cooked, make a delicious dressing.’ MW
