A delicious butter to top grilled fish or chicken.

Ingredients

  • 115 g / 4 oz unsalted butter, diced
  • 4 tbsp chopped coriander leaves

Method

Put all the ingredients into a food processor and blitz to a paste. Taste and add a little salt if you think it needs it.

Spoon on to a sheet of cling-film and roll into a cylinder. Freeze, then cut off discs as required.
