Method

Preheat the oven to 220°C/425°F/gas 7.

Peel, halve and core the pears. Place in a pan with the wine, sugar, cinnamon, and citrus zest and juice. Bring to the boil. Immediately remove from the heat and leave to cool. Remove the pears to drain.
