A classic vanilla ice-cream, heavily scented with vanilla pods, will always be one of the finest elements in a dessert and is, of course, the base for many flavoured ice-creams.
This version is distinguished by using several whole vanilla pods which may be rinsed, dried and used several times. Store them in a jar of caster sugar to infuse it with their heady scent and use this sugar for the next batch of ice-cream (with four fresh vanilla pods).
