Method

Dice the butter and leave to soften at room temperature for 30 minutes.

Sift the flour on to a work surface and make a well in the centre. Put the butter dice in the well, break in the egg, and add the salt. Use your fingertips to rub these in, pulling in more flour from the outside as you work.
