Australia has a flourishing truffle industry. For the past five years at least, I have been able to buy beautiful Australian black winter truffles that rival the French-imported Perigord truffles. Our truffles are grown on truffle farms in Tasmania, Victoria, New South Wales and Western Australia during the southern hemisphere’s winter. It occurred to me that for the first time I could have fresh winter truffles from Australia and fresh summer truffles (imported from Italy) together in the
