Method

Place the live mud crab into a bucket filled with water and plenty of ice for 15 minutes. This will send the crab into a coma, which is a more humane way of treating it. Meanwhile, place a large pot of salted water on the stovetop and bring to the boil. Remove the crab from the iced water, plunge into the boiling water and cook for 10 minutes.
