  • 500 ml (17 fl oz/2 cups) Still Mineral Water
  • 1 Teaspoon

Method

Prepare the seaweed jelly balls 6 hours in advance. Put the mineral water in a small saucepan and bring to the boil. Remove the pan from the heat and add the white tea and dried seaweeds and infuse for 20 minutes. Add the white soy sauce, then strain through a fine sieve, reserving the liquid. Return the liquid to a clean saucepan and discard the seaweed.
