Mud crab really is a luxurious and delicate meat and, in my opinion, has the best flavour of all the crabs available in Australia. You need to buy the crabs live and prepare them on the same day you make the salad. We chill all live seafood in plenty of iced water before cooking it, as the iced water will send most seafood to sleep.
