This is a very elegant and clean-tasting seafood dish. The gentle texture of sea scallops contrasts with the more robust texture of the periwinkles, and the crisp texture of lettuce hearts and cucumbers works well with the luscious scallop velvet and oyster cream. The intensity of the roasted scallop consommé with its crisp acid balance highlights the gentle seafood flavours.
