To make the masterstock poaching liquid, combine all the ingredients, except the chicken, in a large pot. Bring to the boil, skimming the surface if necessary, then reduce the heat to very low and cook for 2 hours. Take the pot off the heat and strain the liquid through a sieve lined with muslin cloth.
