Method

Preheat the oven to 70°C (155°F/Gas ¼). Line two baking trays with silicone paper, spread the chestnut mushrooms in a single layer on the trays and place in the oven for a minimum of 4 hours until the mushrooms are completely dry. This will intensify the flavour of the mushroom stock.</
