Raspberries with Vanilla, Almond and Violet

This is one of my most complex but beautiful desserts. It combines a vanilla mousse with fresh raspberries and violets, violet jelly, raspberry jelly, white chocolate-coated caramelised almonds and raspberry sorbet. It really is a feast for the eyes as well as the palate.
