Method
This dessert is a celebration of summer when cherries and all types of berries are in season. A crumble is made using caramelised puff pastry and white chocolate caramelised almonds, which adds a great texture and crunch to the cherries, berries, cream and jelly. The addition of raspberry and cherry sorbet adds a nice temperature contrast to the dish.
