Place the butter in a tall heavy-based saucepan. A tall pan is needed, as the butter will foam and you do not want it to spill over. Place the pan over high heat and boil the butter until it begins to caramelise. When the foam and butter begin to turn a light brown colour, remove the saucepan from the heat and pour the contents into a large stainless-steel bowl. Use a ladle to skim off any scum
