Method

Put the milk in a saucepan and bring to simmering point. Add the grated winter truffle and a pinch of salt. Remove the pan from the heat and set aside for 10 minutes for the milk and truffle to infuse.

Place the egg yolks and whole egg in a bowl and slowly whisk in the truffle and milk mixture. Allow to cool completely, then divide the truffle milk mixture evenly between eight small cer
