The classic Northern Thai khan toke meal includes this hearty dish, a specialty of the Tai Yai, or Shan, people. It is a winner, with easy-to-find ingredients, straightforward methods, and terrific flavor. I love it with sticky rice and kaeb moo, crunchy pork rinds that are easy to find here in North Carolina.
