Rice Noodles with Lettuce and Ground Beef Gravy

Ingredients: 2 tablespoons cornstarch or flour, dissolved in 3 tablespoons water; ¼ cup coarsely chopped fresh cilantro; 1 teaspoon curry powder; 1 teaspoon sugar; ¾ pound ground beef; 2 tablespoons fish sauce; 1½ cups chicken broth or water; 1 tablespoon dark soy sauce or soy sauce; 3 tablespoons vegetable oil; 5 roma (plum) tomatoes, or 12 cherry tomatoes; 1 tablespoon coarsely chopped garlic; 2 to 3 tablespoons water, as needed to keep noodles from sticking; ¾ pound dried rice noodles, fettucine or linguine width; 5 large leaves of lettuce, or 3 to 4 cups mixed salad greens

During my years in Thailand, the Peace Corps headquarters in Bangkok was located at the end of Soi Somprasong 2, a meandering urban lane off Petchaburi Road. About halfway down was a pleasant open-air noodle cafe where my friends Sandi, Dudley, Mary Claire, and I often stopped for a satisfying plate of kwaytiow neua sahp. Since the sauce is a simple gravy made with ground beef, it is a particularly quick and easy noodle dish to make at home. I like to serve the noodles on leaves of bibb, Bo
