In a medium saucepan, combine the milk, cinnamon stick, and salt. Bring to the boil and stir frequently.

Add the rice, reduce to a simmer, then cover and leave to cook for 30 to 35 minutes, stirring occasionally, until the rice is soft and tender. Add the sugar, then cover and cook on a low heat for another 15 minutes. The texture should now be thick and creamy.

Remove from the heat and allow the rice pudding to cool. Sprinkle with ground cinnamon and serve warm or chilled.<
