This quick dish is perfect at any time of the day or night – and is especially good for chasing away hangovers! Put a knob of butter in a frying pan. When sizzling and starting to blacken at the edges, put one or two eggs into the pan, sprinkle with salt and pepper, and cook to taste – I like mine easy over (turned over and cooked briefly on the other side). Put the eggs on a warm plate and deglaze the pan with a tablespoon of Chocolate Balsamic Vinegar. Crusty bread and salad turn it into a more substantial dish.
