  • 100 g golden syrup
  • 1 egg
  • 350 g 00 (Italian doppio zero) flour
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ready-ground cardamom
  • 1 tsp bicarbonate of soda
  • 1 tsp unsweetened cocoa powder
  • 100 g butter
  • 100 g chopped real chocolate pieces
  • 140 g golden brown caster sugar
  • Smarties and white icing, to decorate (optional)


Preheat the oven to 200°C/Gas 6 and line several baking trays with greaseproof paper or silicone baking sheets.

Beat the egg into the golden syrup in a bowl. Sift the flour, then mix in the spices, bicarbonate of soda and cocoa powder. Put this into a food processor (you can also do this in a bowl if you prefer) and add the butter. Mix together until the mixture resembles fine crumbs. Add the chocolate, sugar, syrup and egg mixture, and mix until a smooth dough is formed. If the mixture looks too dry, add a teaspoon or two of cold water.

Roll out, using extra flour if needed (you shouldn’t need it), to a thickness of about 3 mm and cut out shapes, either with a cutter or freehand. Put on the prepared baking trays and bake for 10–15 minutes until cooked and starting to brown at the edges and smell cooked (take care not to overcook). Allow to cool on a wire rack and decorate with Smarties and white icing if you wish.
