Greek Fava is creamy comfort food: rustic, hearty and nutritious, it is so good on its own but goes particularly well with dark leafy greens and with salty ingredients like anchovies, sardines or feta. This addictive purée also adds a wonderful splash of vibrant green colour topped with salsa as one of a selection of little meze dishes.

Ingredients

  • 350 g green split peas
  • 1 small onion, finely chopped
  • 1 stick

Method

  • Place the split peas, onion, celery and garlic in a large saucepan. Add 1 litre water and bring to the boil, skimming to remove any sediment as required. Cover and simmer until the peas have softened.
  • Leave the peas to cool a little, then blitz or liquidize the peas
