Serve these skewers with a minty flavoured yoghurt or cooling tzatziki.

Method

  • Cut the halloumi into 3cm chunks. Thread onto skewers alternating with the red pepper and courgette. Repeat to make 4 skewers.
  • Stir the mint into the yoghurt and chill until required.
  • Preheat the grill or a large frying pan and brush with a little oil. Cook the skewers for 8–10 minutes, turning every 2–3 minutes or until the cheese has softened and formed a golden-brown crust.
  • Serve the skewers drizzled with a little ladolemono and a spoonful of onion and cabbage garnish.
