The most important step in making traditional chicken gyros is the marinade. Tender chicken thighs should be steeped in a salt-based marinade (almi), along with Mediterranean herbs and earthy spices, then roasted or grilled until crunchy and irresistible. And if that is not enough, most Greeks enjoy their traditional Greek chicken gyro with chips… and a creamy yoghurt dip. Wrapped in warm pitta is another favourite way.

Delicious. So tender and juicy. Followed the recipe just used a bit more chicken - 3 lbs. I thought the cinnamon would be too much but it really adds something here. Will definitely make this again.
