Method

Remove from the refrigerator and allow the cutlets to come to room temperature, which will take about 15 minutes.
Heat a griddle or grill pan over a high heat until almost smoking, add the cutlets and sear for about 2 minutes.
Turn the chops over and cook for another 3 minutes for medium-rare
