Sweet and succulent, lamb cutlets need little else than a hot flame and a keen eye.


  • Remove from the refrigerator and allow the cutlets to come to room temperature, which will take about 15 minutes.
  • Heat a griddle or grill pan over a high heat until almost smoking, add the cutlets and sear for about 2 minutes.
  • Turn the chops over and cook for another 3 minutes for medium-rare
