A pinch of saffron in a honey dressing is delicious drizzled over this fragrant rice but equally good to glaze grilled fish and chicken.

Ingredients

For the dressing

1 tbsp. lemon juice
A pinch of saffron threads

Method

To make the dressing, gently heat the lemon juice and saffron in a very small saucepan for about 30 seconds, until you can see the saffron dissolve and colour the liquid. Leave to cool, then whisk in the honey and olive oil and season.
