Our wonderful Greek pasta sauce lends itself to so many Mediterranean recipes

Ingredients

  • 500 g tomato passata
  • 200 g red onion
  • 100 g

Method

  • Using a food processor or hand blender, blitz together the tomato passata, onion, sofrito, rosemary, sage, bay leaf and thyme. Pour into a pan and add 200 ml water.
  • Cover and simmer for 45 minutes until thickened. Season to taste.
