Quick pickling is an easy way to turn vegetables into crisp-textured slaws or ribbons to pile high alongside meze. With its refreshing crunch and sweet and sour flavour, this garnish is quite addictive!

Ingredients

  • 350 g white cabbage
  • 350 g red onion
  • 700 ml

Method

  • Using a mandolin or mini food processor, finely shred the cabbage and onion. Set aside.
  • In a large glass bowl, mix together the vinegar, sugar, salt and thyme leaves with 200ml cold water. Add the shredded cabbage and onion to the liquid, submerging it completely. Use a saucer to weigh the ingredients down if required.
  • Cover and refrigerate overnight. A
