Glauce says: ‘When I was a kid I was always watching cooking programmes and later I would try to cook. I believe this recipe comes from my Nona and Nono. I have Italian heritage and I’m inspired by Italian food. One day, I asked my staff if they wanted to try something different and they said yes, so I put on the chef’s jacket and started to cook for them. Everyone really enjoyed it so once a week I am asked by the staff to make a special recipe. This was one of my creation
