This has to be my favourite dip.

Rich-in-calcium sesame seeds are ground into a purée or paste we call tahini. Its flavour and adaptability make it an ideal ingredient in sauces, or for dipping or drizzling over our many vegetable or pulse-based dishes.

Ingredients

  • 3 tbsp. tahini paste
  • 2–4 cloves of garlic, crushed
  • Juice of 2–3

Method

  • Using an electric blender, whizz all the ingredients together until smooth. Blend in just enough cold water to form a consistency similar to thick pouring cream.
  • Cover and chill, then serve into a small dipping bowl, drizzle on a little extra virgin olive oil and garnish with parsley and a pinch of paprika or chilli powder.
