This is a stand-by store-cupboard soup, so there’s no excuse for not having something hot and nutritious to eat. It takes me back to my college days’ repertoire and it’s definitely one recipe I will be packing off with my daughter when she starts university. It is one that we had on The Real Greek seasonal winter specials’ board. I like it smooth but if you prefer a more textured soup, just don’t blitz it.
