Cretan-style Orange Salad

The island of Crete is, according to folklore, the birthplace of watercress. We Greeks use this peppery plant in a variety of classic dishes including this traditional colourful salad. I like to add rocket and spinach too when in season.

Ingredients

  • 4 small cooked beetroot, cubed
  • Juice of 1 small lemon
  • 6 tbsp.

Method

  • Combine the beetroot, most of the lemon juice, 2 tbsp. olive oil and salt and pepper in a glass bowl. Cover and set aside.
