Little pomegranate seeds shine out like hidden jewels in this big salad. Served warm, the flavours are much more intense, but it is just as good a day later! I like to use bulgur wheat, which is a whole-wheat grain that has been cracked and partially pre-cooked – it is naturally high in fibre and a great carrier of flavours too. Couscous works just as well, too.
