Across Greece and the Levant, street vendors sell their own variation of these deliciously sweet honey fritters. There is nothing like the aroma of freshly made Loukoumathes to draw in the crowds. And when making these at home, I struggle to keep up with the family waiting for the next fritter to come out of the pan.

Ingredients

For the syrup

  • 300 g caster sugar
  • 400 ml water
  • 300

Method

  • Place all the ingredients for the syrup in a saucepan and bring to a steady boil for 5 minutes, then leave to cool.
  • To make the batter, sift the flour and salt into a deep bowl, forming a well in the centre. Dissolve the yeast in a tablespoon of lukewarm water and pour into the well. Bind together while gradually adding enough lukewarm water to form a light batte
