Eggs are a powerhouse of nutrients. Scrambled eggs are quick and super simple to make and this recipe is easy to adapt according to what you have to hand.
Melt the butter in a small frying pan over a medium heat. Mix the eggs and milk together in a bowl, then add them to the pan and stir for a minute or so until scrambled. Add the cheese and remove from the heat.
Lightly toast the split muffin, spread both halves with butter and spoon the cheesy scrambled eggs on top.
