If you’re eating a cheese sandwich and something seems to be missing . . . it’s probably that you need a pickled onion or two alongside. Back in the old days, there wasn’t that much food in Irish pubs, but in country pubs you might see a jar or bowl of pickled onions, and you could have one free with your pint. Salty and tangy, it’s just a savory little bite that sort of whets your appetite. They were considered to be packed with vitamins, and the vinegar was thought to help digestion. Salt
