Since we eat so much lamb, eating it roasted with mint sauce can get old fast. Whereas a butterflied leg of lamb can be stuffed with all sorts of good things, rolled and roasted, keeping it perpetually interesting. The garlicky, herby mixture here, supplemented with a handful of golden raisins to play off the meat’s natural sweetness, was a particular favorite of my father, but it’s also very good with the bread and apple mixture used to stuff the pork chops</
