  • 1 white radish
  • 1 large shallot
  • 2 carrots

Method

  1. Cut a long sheet of pre-peeled white radish on a mandoline 2mm thick, trim to small rectangles of 7x4cm.
  2. Cut all the other vegetables into very fine julienne, bind with a touch of mayonnaise, squeeze of lemon and finish with freshly cut herbs and finely chopped red chilli.
  3. Place a small amount onto a rectangle of radish and roll to a perfect cylinder.
