Ingredients
- 1 shallot, peeled and sliced
- 1 garlic clove
- 50 ml olive oil
Method
- In a wide heavy based pan sweat the shallot and garlic for about 5 minutes in the olive oil.
- Peel and dice the celeriac into small cubes, add to the sweated shallots and cook for 10 minutes.
- Add the milk and water, bring to a simmer and cook out for 10 minutes.
- Once cooked, blend to a smooth soup in a food processor.
