Ingredients

  • 1 shallot, peeled and sliced
  • 1 garlic clove
  • 50 ml olive oil

Method

  1. In a wide heavy based pan sweat the shallot and garlic for about 5 minutes in the olive oil.
  2. Peel and dice the celeriac into small cubes, add to the sweated shallots and cook for 10 minutes.
  3. Add the milk and water, bring to a simmer and cook out for 10 minutes.
  4. Once cooked, blend to a smooth soup in a food processor.
  5. Grate a Granny Sm
