  • 1 large onion
  • 2 garlic cloves, finely chopped
  • 50 g butter

Method

  1. Chop the onion and slowly sweat off with the garlic in the butter and oil, no colouring required.
  2. Finely chop all the vegetables in a uniform dice, approximately 5mm square, keeping each vegetable separate.
  3. Once the onion has softened, add the swede, carrot, potato and celeriac.
  4. Cook for 5-10 minutes then add the courgettes, leek and bouquet ga
