Method

  1. Remove the legs and wings (use for another dish or freeze) from the chicken and place the chicken crown into boiling water for 20 minutes.
  2. Whilst the chicken is cooking, dice the peppers, leek and the shallots and mix together. Add the ketchup along with the water, olive oil and vinegar, taste and season as required and leave at room temperature.
