  • 4 x 140 g sea bass per portion

Method

Hon Dashi

  • Bring to the boil all the ingredients in stage 1 and simmer gently for 5 minutes.
  • Remove from the heat and add the ingredients from stage 2.
  • Cling film and leave to cool until room temperature.
  • Pass through a fine sieve and chill until needed.
