  • 1 chicken crown with double breast on the carcass
  • 1 onion
  • 2 celery sticks<

Method

  1. Place the chicken into a large pan and cover with just enough chicken stock or water.
  2. Place the onion, celery, carrot, leek, star anise and bouquet garni into the same pan, bring to the boil and very gently simmer for approximately 25 minutes.
  3. Remove the skin and gently simmer the stock with the mushrooms and any bones from the chicken. Reduce by 50%.
