  • 4 cloves of garlic, skin on, crushed

Method

  1. Get your fishmonger to skin, pin-bone and fillet your fish.
  2. Preheat the oven to 200°C and bring a small pan of water to the boil.
  3. Pat the fish dry on kitchen towel. Season and leave while preparing the rest of the dish.
  4. Blanch the garl
